An Impressive Mix-up!!

A few days ago, we had guests coming from India. This was their first trip to Dubai, and their schedule was all booked with tours around the city, leaving no time for leisurely niceties left for relatives such as me. So, we decided to steal some time for a quick breakfast. I was running out of ideas. During my regular visit to the grocer, while I was walking around the bakery section, I picked up a box of fresh croissant. Knowing pretty well, that they won’t remain fresh the next day, I still picked them up. Back home, as I was rummaging through my fridge, I saw some leftover cherries and half a packet of semi-sweet chocolate chips. I knew what creation was in the offing.

I usually prefer brioche bread when it comes to making French toast, but the croissant is such a fantastic alternative. Crispy exterior and soft interiors and with the occasional burst of the sweet cherries, it is perfect.
So, here is the recipe and it works pretty well when you need to impress with very little time in hand.

Serves 4-5
Cooking time: 20-25 minutes


Croissant 8
Milk 150 ml
Eggs 5
Canola oil 4 tbsp
Cherries 250 gms
Chocolate chips 40 gms
Sugar 30 gms
Vanilla essence 1 tsp
Cinnamon powder 1 tsp
Butter 2 tbsp
Coconut cream 400 gms (1 can)


  1. Slice the croissant and place them as a layer with pitted, sliced cherries. Arrange them on a baking tin.
  2. Blend milk, eggs, sugar, oil, vanilla and cinnamon with a hand blender.
  3. Pour the milk mixture over the croissant and cherries and let it sit in the refrigerator for at least 20-25 minutes. Sprinkle the chocolate chips.
  4. Rub some melted butter over the exposed croissant. Bake in a preheated oven ( 160 degree Celsius) for 20-25 minutes.
  5. Dust with icing sugar and serve with whipped coconut cream or regular cream of your choice.

note: you also choose to sprinkle toasted and slivered almonds
