Ciabatta toasts with ricotta and scrambled eggs

Preparation time: 10-15 minutes
Cooking Time: 10-12 minutes
Serves : 2-3

Ingredients

  • Ciabatta bread 1
  • Ricotta cheese 250 gms
  • Eggs 2-3
  • Milk 100 ml
  • Butter 2 tbsp
  • Sundried tomatoes 4-5  (sliced)
  • Basil leaves
  • Salt and pepper
  • Chili flakes (optional)

Method

  1. Toasts the bread slices and keep them aside. Whisk the eggs, milk, salt, and pepper in a bowl until well combined.
  2. Heat a non-stick frying pan or skillet over medium heat and coat the pan with a small amount of butter or oil.
  3. Pour the egg mixture into the pan and let it cook for a few seconds until it starts to set around the edges.
  4. Using a spatula, gently push the cooked eggs towards the center, allowing the uncooked egg to flow to the edges.
  5. Continue this process until the eggs are mostly cooked but still slightly runny. Remove the pan from the heat, as the residual heat will continue cooking the eggs.
  6. Spread the whipped ricotta cheese evenly on the toast and place the scrambled eggs on top.
