Ingredients

  • Dates (pitted) 1 cup
  • Walnuts (toasted) ½ cup
  • Oats (toasted) ¼ cup
  • Natural peanut butter 1 tbsp
  • Honey 3 tbsp
  • Dark chocolate (70% cacao or higher) 1 cup
  • A pinch of sea salt
  • Optional: a dash of cinnamon for extra warmth
  • Marshmallow ½ cup (optional)
  • Edible sugar eyes (optional)

Method

  1. In a food processor, combine dates, walnuts, peanut butter, sea salt, and cinnamon (if using). Process until you have a sticky, well-combined mixture. You should be able to form it into small balls easily.
  2. Scoop about 1 tablespoon of the mixture and roll it into a ball. Repeat with the remaining mixture, placing each truffle on a parchment-lined tray.
  3. Melt the dark chocolate in a double boiler or microwave. Stir until smooth.
  4. Using a fork or toothpick, dip each truffle into the melted chocolate, allowing any excess to drip off. Place them back on the parchment paper.
  5. Refrigerate for 20-30 minutes or until the chocolate is set. Decorate with marshmallow webs and edible eyes. 
  6. Microwave the marshmallows for 15-20 seconds and using a toothpick or popsicle stick pull strings around the truffles.
