There’s something undeniably joyful about a homemade popsicle on a warm day, but when you pair the sweet freshness of strawberries with rich cream and finish it off with a decadent dark chocolate drizzle, you elevate it into pure luxury. These strawberry cream popsicles are simple to make yet feel like a treat straight out of a boutique dessert shop—perfect for impressing guests or just spoiling yourself.

Why This Combo Works

Strawberries and cream are a classic pairing for a reason. The natural sweetness and slight tang of ripe strawberries balance beautifully with smooth, velvety cream. Add a drizzle of dark chocolate, and the result is a dessert that hits all the right notes: fresh, creamy, fruity, and indulgently bittersweet. The chocolate hardens into a crisp shell when it meets the cold popsicle, creating a delightful texture contrast in every bite.

Preparation time: 10 minutes
Cooking time: 10 minutes
Serves: 6-7

Ingredients

  • Fresh strawberries (roughly chopped), 2 cups
  • Granulated sugar (adjust depending on berry sweetness) ½ cup
  • Heavy cream 1 cup
  • Whole milk or coconut milk, ½ cup
  • Vanilla extract 1 tsp
  • Dark chocolate chips or chopped dark chocolate ½ cup
  • Coconut oil (optional, for smoother drizzle) 1 tsp
  • Dried rose blooms (optional) 1 tbsp

Method

  1. Cook the sliced strawberries with sugar for 2-3 minutes on a low flame. Turn off the heat and let it cool down.
  2. Blend the strawberries into a smooth puree with cream, milk, and vanilla extract. Pour the mixture into popsicle molds, insert sticks, and freeze for at least 6 hours or overnight until fully set.
  3. Combine dark chocolate and coconut oil in a heatproof bowl and melt in the microwave in 20-second intervals, stirring until silky smooth.
  4. Remove the popsicles from the molds, place them on a parchment-lined tray, and drizzle with the warm chocolate. Sprinkle rose petals. Freeze for another 10–15 minutes to set the drizzle.
