Rich dark chocolate, warm buttery peaches, softly whipped cream, and toasted almond flakes come together in this chocolate pudding with caramelized peaches. It is an easy yet elegant dessert with a beautiful balance of flavours and textures.

The chocolate pudding is made with only a handful of ingredients—dark chocolate, milk, cornflour, condensed milk, and butter. Once chilled, it becomes silky smooth and almost mousse-like, without requiring eggs, gelatine or heavy cream.

An Easy Chocolate Dessert That Looks Elegant

Chocolate pudding is one of those desserts that can look very simple until the right toppings transform it completely. For this version, I caramelized fresh peach slices in a little butter until they became soft, glossy, and lightly golden around the edges.

The peaches’ sweetness and freshness beautifully balance the richness of the dark chocolate. Whipped cream adds lightness, while toasted almond flakes bring the crunch that a soft dessert like this needs.

From a food styling perspective, the colours also work wonderfully together. The deep brown pudding creates a dramatic base for the warm golden peaches, white whipped cream and delicate almond flakes. It is a simple combination, but every element adds contrast—both visually and in flavour.

Ingredients

For the chocolate pudding

  • Dark chocolate: 100 g
  • Full-fat milk: 500 ml
  • Cornflour 2 tablespoons
  • Condensed milk, or more according to taste: 1 tablespoon
  • Butter 1 teaspoon
  • A small pinch of salt, optional
  • Peaches 2–3 ripe
  • Butter 1 tablespoon
  • Lightly sweetened whipped cream
  • Toasted almond flakes
  • Finely chopped dark chocolate, optional

Method

  1. Cut the peaches into wedges or halves. Melt the butter in a wide frying pan over medium heat.
  2. Arrange the peach slices in a single layer and cook for 1–2 minutes on each side. Allow the peaches’ natural sugars to caramelize gently.
  3. The peaches should become glossy and lightly golden while still holding their shape. Remove them from the pan and allow them to cool before placing them over the chilled pudding.
  4. Take approximately 100 ml of the milk in a small bowl. Add the cornflour and whisk until completely smooth and free from lumps.
  5. Pour the remaining milk into a saucepan with the chocolate and add the condensed milk. Place it over medium-low heat and allow it to warm gently.
  6. Add the cornflour mixture while continuously whisking. Continue cooking over low to medium heat until the mixture begins to thicken. Make sure to stir continuously, especially around the base and sides of the saucepan.
  7. Once the mixture has thickened enough to lightly coat the back of a spoon, remove the saucepan from the heat. Add the butter in cubes one at a time, whisking throughout, and a small pinch of salt.
  8. Leave it undisturbed for about a minute, allowing the heat to soften the chocolate. Whisk until the chocolate has completely melted and the pudding looks glossy and smooth. For an exceptionally silky texture, pass the pudding through a fine-mesh sieve.
  9. Divide the chocolate pudding between individual serving glasses or bowls. Allow it to cool slightly before covering and refrigerating for at least 3–4 hours.
