Preparation Time: 12-15 minutes
Cooking time: 12-15 minutes
Serves : 3-4

Ingredients:

  • Spaghetti 1 pack
  • Clams (cleaned) 15-20
  • Olive oil
  • Garlic (minced) 3-4
  • White wine ½ cup
  • Butter 1 tbsp
  • Red pepper flakes (to taste) ½ tsp
  • Salt and black pepper (to taste)
  • Fresh parsley, chopped
  • Lemon (zest and juice) 1
  • Grated Parmesan cheese (for serving) 2-3 tbsp

Method

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente. Drain and set aside.
  2. Heat the olive oil over medium heat in a separate large pan. Add the garlic and red pepper flakes. Sauté for about 1 minute until the garlic becomes fragrant but not browned.
  3. Add the cleaned clams to the pan, add butter, and pour the white wine. Cover the pan with a lid and cook for about 5-7 minutes, shaking the pan occasionally. The clams are ready when they open up. Discard any clams that don’t open.
  4. Once the clams are cooked, add the cooked spaghetti to the pan with the clams. Toss everything together to combine. Add some pasta cooking water or more wine if the mixture seems too dry.
  5. Season the dish with salt and black pepper to taste. Sprinkle in some chopped fresh parsley and lemon zest for added flavor and freshness.
  6. Serve with grated Parmesan cheese on the side.
