Ingredients

  • Unsalted butter 110 gms
  • Granulated sugar (white) 100 gms
  • Coconut sugar 100 gms 
  • Eggs 2
  • Vanilla extract 1 tsp
  • Unsweetened cocoa powder  20 gms
  • All-purpose flour 80 gms
  • Salt ¼ tsp
  • Expresso powder 2 gms
  • Creamy peanut butter 70 gms
  • Dark chocolate100 gms

Method

  1. Start by preheating your oven to 350°F (175°C). Grease and line an 8×8-inch (20×20 cm) square baking pan with parchment paper.
  2. Melt chocolate and sugar in a bowl over a double boiler. Whisk in sugar until well incorporated. Add the eggs and whisk again.
  3. Mix flour, coffee, salt, and cocoa powder in a bowl. Slowly add the dry ingredients to the wet ingredients and fold.
  4. Pour into the prepared tin. Heat the peanut butter until it’s in the pourable consistency. Pour dollops of peanut butter and use a toothpick to make swirls.
  5. Bake in the oven for 30-35 minutes or until a toothpick inserted into the center comes out with a few moist crumbs.
  6. Let the brownies cool completely in the pan before cutting them into squares and serving.
