Ingredients:
- Unsalted butter (softened) 120 gms
- Granulated sugar 100gms
- Egg 1
- Lemon zest from 1 lemon
- Lemon juice 1/2 tsp
- All-purpose flour 150 gms
- Salt 1/4 tsp
- Dark chocolate 100 gms (melted)
- Edible sugar eyes 20-25
Method
- In a large mixing bowl, cream the softened butter and sugar until light and fluffy.
- Beat in the egg, followed by the lemon zest and lemon juice. Mix well.
- In a separate bowl, whisk together the flour and salt.
- Gradually add the dry ingredients to the butter mixture, mixing until a soft dough forms.
- Wrap the dough in plastic wrap and chill in the refrigerator for at least an hour.
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Roll out the dough to about 1/4-inch thickness and cut into desired shapes using cookie cutters.
- Place the cut-out cookies on the prepared baking sheet.
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow cookies to cool completely before decorating.
