Ingredients

  • Carrots (large), grated 4
  • Milk 1/2 cup
  • Condensed milk (for added creaminess) 2 tbsp
  • Ghee (clarified butter) 2-3 tbsp
  • Sugar (adjust to taste) 1/2 cup
  • Cardamom powder 1/2 tsp
  • A pinch of saffron strands (soaked in 2 tablespoons of warm milk)
  • Nuts (pistachios), chopped 1/4 cup
  • Edible silver leaf for garnishing (optional)
  • Orange zest 1 tsp
  • Whipping cream ½ cup

Method

  1. Heat ghee in a thick-bottomed pan. Add the grated carrots and sauté for 5-7 minutes. Add sugar and cardamom powder. Stir well and cook for 10 minutes.
  2. Add milk and condensed milk. Cook on a medium flame, stirring occasionally, until the milk is absorbed.
  3. Once the Halwa thickens, add the nuts. Mix well.
  4. Whip the cream with orange zest.
  5. Place halwa in individual glasses and top it off with 1-2 tbsp of whipped orange cream for serving.
  6. Garnish with nuts and edible silver leaf(optional).
  7. Serve warm and enjoy the fusion of classic and contemporary flavors!
