Ingredients
For the cinnamon-roasted nectarines:
- Nectarines (quartered) 3-4
- Honey or maple syrup + extra for drizzle 2 Tbsp
- Cinnamon 1 tsp
- Vanilla extract ½ tsp
For the Crepes:
- All-purpose flour 60 gms
- Egg 1 (large)
- Milk 150 ml
- Sugar 1 tbsp
- Vanilla extract ½ tsp
- A pinch of salt
- Melted butter (plus extra for cooking) ½ tbsp
- Whipped cream or Greek yogurt (optional)
- Chopped nuts or toasted sliced almonds (optional)
METHOD
- Preheat your oven to 375°F (190°C). In a small bowl, mix honey (or maple syrup), cinnamon, and vanilla extract.
- Place the nectarine in a baking dish and brush them generously with the cinnamon mixture. Roast for 20-25 minutes until the nectarines are tender and caramelized. If you like them extra golden, broil for an additional 2 minutes.
- In the meantime take a blender jar, place flour, sugar, salt, eggs, milk, vanilla extract, and melted butter. Pulse a couple of times till well combined.
- Let the batter rest for 10-12 minutes to prevent bubbles. Heat a non-stick pan over medium heat and lightly grease with butter.
- Pour about ¼ cup of batter into the pan, swirling it to spread evenly. Cook for 1-2 minutes until the edges lift slightly, then flip and cook for another 30 seconds.
- Repeat with the remaining batter, stacking the crepes on a plate. Place a warm crepe on a plate and add a roasted nectarine half on top. Fold or roll the crepe, then drizzle with extra honey or maple syrup.
- Add a dollop of whipped cream or Greek yogurt, sprinkle with chopped nuts, and enjoy!
