Ricotta Lemon Spaghetti Recipe
Ingredients
- Spaghetti 250 g
- Ricotta cheese, crumbled 200 g
- Olive oil 2 tablespoons
- Cloves, finely chopped 2
- Zest of 1 lemon
- Fresh lemon juice, or according to taste 2 tablespoons
- Parmesan cheese, plus extra for serving ½ cup
- Reserved pasta water, 1 to 1½ cups
- Handful fresh arugula leaves
- Salt, to taste
- Freshly ground black pepper, to taste
Method
- Bring a large pot of salted water to a boil. Cook the spaghetti until al dente according to the packet instructions.
- Before draining the pasta, reserve approximately 1½ cups of the pasta water. Drain the spaghetti and set it aside.
- Heat the olive oil in a large pan over low to medium heat. Add the chopped garlic and allow it to sizzle gently until fragrant. Do not let the garlic brown.
- Add the crumbled ricotta, lemon zest and lemon juice to the pan. Stir briefly, then add about ½ cup of the reserved pasta water.
- Transfer the ricotta mixture to a blender or use a hand blender to blend it into a smooth, creamy sauce.
- Return the sauce to the pan. Add the cooked spaghetti and toss until every strand is evenly coated.
- Add the grated Parmesan, salt and freshly ground black pepper. Gradually add more pasta water as required until the sauce becomes silky and coats the pasta without feeling too thick.
- Add the arugula leaves and toss gently. The heat from the pasta will soften them slightly while keeping their fresh colour and texture.
- Serve immediately, finished with extra Parmesan, lemon zest and black pepper.

Styling and Serving Notes
Serve the spaghetti in a shallow bowl or a wide plate so that the shape of the pasta remains visible. Finish with freshly grated Parmesan rather than finely powdered cheese, as the larger shavings add more visible texture. A few fresh arugula leaves placed on top will keep the presentation bright and lively.
For an additional touch of freshness, garnish with thin strips of lemon zest or serve with a small lemon wedge on the side.
