Fig season is here, and these beautiful fruits need very little effort to become something special. Their deep colour, delicate skin and naturally sculptural shape make them instantly appetizing.

For this recipe, I filled fresh figs with soft ricotta, added thyme and chopped nuts, and finished them with a drizzle of honey before roasting. The figs were naturally sweet, so a little honey was enough.

The result was a beautiful combination of warm, soft figs, creamy ricotta, fresh herbs, and crunchy nuts. It works equally well as an elegant appetizer or a simple seasonal dessert.

There was only one challengeโ€”the styling!

Figs look perfectly plump when they go into the oven, but once properly roasted, they soften and lose their shape. As a food stylist, I know the dangers of working with soft-cooked food. It may taste incredible, but it does not always cooperate in front of the camera.

My first batch was delicious but far too soft to photograph neatly. For the second batch, I removed the figs from the oven much earlier so they would hold their beautiful shape.

My recommendation is to roast them fully for the best flavour and texture. However, when photographing them, take your pictures before roasting or reduce the roasting time. You can always return them to the oven afterwards.

Preparation time: 10-15 minutes
Baking time: 12-14 minutes
Serves : 3-4

Ingredients

  • Fresh figs 8
  • Ricotta cheese 200 g
  • Fresh thyme leaves 1 teaspoon
  • Chopped pistachios, walnuts or almonds 2 tablespoons
  • Honey 1โ€“2 tablespoonsย 
  • A pinch of salt
  • Freshly ground black pepper, optional
  • A little olive oil for the baking dish

Method

  1. Preheat the oven to 190ยฐC.
  2. Lightly grease a small baking dish with olive oil.
  3. Wash the figs gently and pat them dry.
  4. Cut a cross into the top of each fig without cutting completely through the base. Carefully open the sections slightly.
  5. Mix the ricotta with the thyme and a small pinch of salt. Add black pepper when making a more savoury version.
  6. Spoon the ricotta mixture into each fig.
  7. Sprinkle with chopped nuts and drizzle with honey.
  8. Roast for 12โ€“15 minutes, until the figs are warm and soft.
  9. Garnish with fresh thyme, extra nuts, and a little more honey before serving

Serve warm as an appetizer, a light dessert, or as part of a cheese platter.

Food Styling Tip

Choose figs that are ripe but still firm. For photographs, roast them for only 5 to 7 minutes, so they retain their shape. Once the photographs are finished, return them to the oven and continue roasting until soft.

These figs may not remain perfectly shaped once roasted, but their flavour more than makes up for it.
