Peach Cheesecake Ice Cream Sandwiches

What kind of home chef are you?

Are you the kind who makes sure every single ingredient is measured, checked, and sitting on the counter before you begin? Or are you perfectly happy making a little tweak here, a simple substitution there, and seeing where the recipe takes you?

I definitely belong to the second category.

I hate rushing to the grocery store just because I am a little short of one ingredient. Unless it is essential, I would much rather look around my kitchen, improvise, and make it work. And sometimes, those little improvisations lead to something even better than what I originally planned.

That is exactly how these Peach Cheesecake Ice Cream Sandwiches happened.

When Vanilla Ice Cream Sandwiches Became Something Else

The plan was very simple: homemade vanilla ice cream sandwiches.

Everything was going according to plan until I managed to drop almost half of my whipping cream. Suddenly, I didn’t have enough cream for the ice cream filling I had intended to make.

Going to the grocery store for another carton? Absolutely not.

I had a tub of cream cheese in the fridge and some beautiful peaches waiting to be used, and almost immediately the idea changed from vanilla ice cream to peach cheesecake ice cream.

And I am so glad it did.

I caramelized the peaches until they became soft, glossy, and slightly jammy. Then I whipped the cream I had left and folded it together with condensed milk and cream cheese. The cream cheese gave the mixture that lovely cheesecake richness while also making the filling beautifully creamy.

Suddenly my little kitchen accident was starting to look very promising.

Preparation time: 10-15 minutes
Freezing time: overnight
Serves: 6- 7

Ingredients

For the peach filling

  • Ripe peaches, diced: 2–3
  • Butter 1 tbsp
  • Brown sugar, depending on the sweetness of the peaches: 1–2 tbsp
  • Vanilla extract, optional: ½ tsp

For the cheesecake ice cream

  • Whipping cream, chilled: 250 ml
  • Cream cheese, softened slightly: 250 g
  • Condensed milk, or adjust to taste: ½ cup
  • Vanilla extract, 1 tsp

For assembling

  • Rectangular tea biscuits, depending on the size of your tin, 16–20

Method

  1. Melt the butter in a small pan over medium heat. Add the diced peaches and brown sugar. Cook for a few minutes until the peaches soften slightly and the juices become glossy and syrupy.
  2. Add vanilla if using. Remove from the heat and allow the peaches to cool completely before adding them to the ice cream mixture.
  3. Whip the chilled whipping cream until soft peaks form. In another bowl, beat the cream cheese until smooth.
  4. Add the condensed milk and vanilla and mix until creamy. Gently fold the whipped cream into the cream cheese mixture, taking care not to knock out too much air.
  5. Line a brownie tin or small rectangular baking tin with baking paper, leaving enough overhang to help lift the frozen slab later.
  6. Spread the cheesecake ice cream mixture evenly into the tin. Spoon the caramelized peaches over the surface. You can lightly swirl some of them into the cheesecake mixture while leaving some visible on top.
  7. Arrange the tea biscuits closely together over the entire surface. Cover and freeze for at least 6–8 hours, preferably overnight, until completely firm. Lift the frozen cheesecake slab out of the tin using the baking paper.
  8. Using the biscuits on top as your guide, cut the slab into individual portions. Place another tea biscuit on the exposed side of each piece and gently press to create your sandwich.
  9. Return them to the freezer briefly if they have softened while assembling. Take the ice cream sandwiches out of the freezer for about 3–5 minutes before eating.

Sometimes the Best Recipes Aren’t Planned

What started as a vanilla ice cream sandwich and a minor kitchen mishap turned into a dessert I would happily make again exactly this way.

The cream cheese added richness, the caramelized peaches brought sweetness and freshness, and those simple tea biscuits made the whole thing ridiculously easy to assemble.

Maybe that is why I don’t mind being the cook who improvises.

Sometimes being short of an ingredient isn’t really a problem.

Sometimes it’s the beginning of a much better recipe.
