Lemon sumac baked chicken

Chicken paired with citrus fruits is a classic and delicious combination popular in many cuisines worldwide. Citrus fruits like lemon, lime, and orange add a bright and zesty flavor to the chicken, making it a perfect choice for a light and refreshing meal. Here is an easy-baked chicken recipe loaded with freshness and tastes phenomenal.

One of the most popular ways to prepare chicken with citrus fruits is to marinate the chicken in a mixture of citrus juice, herbs, and spices. The acid in the citrus juice helps to tenderize the chicken and infuse it with flavor. Mayer lemons are such versatile ingredients, and I enjoy using them. Meyer lemons can be used in various ways in cooking and baking. The overcooked lemon slices loaded with chicken flavor and sweetness are a delight.

This baked chicken can take center stage on your Eid dinner table. I love pairing it with pearl or regular couscous. Don’t forget to keep some extra couscous or bread to soak in the extra flavourful oil left in the baking tray. Enjoy!

Ingredients

  • Chicken (with bone) 1 and ½ kg
  • Lemon 2(sliced) + 1(zested)
  • Lemon juice 2 tbsp
  • Garlic 1 whole
  • Olive oil ½ cup
  • Sumac 1 tbsp
  • Parika 1tsp
  • Cumin powder ½  tsp
  • Salt and pepper

Method

  1. Marinate the chicken pieces with grated garlic cloves (two) olive oil, lemon juice and zest, cumin powder, paprika, and sumac.
  2. Tuck in the garlic halves and lemon slices with the chicken.
  3. Bake in a preheated oven for 25-30 minutes at  160 degrees.
  4. Serve hot with warm couscous. 
  5. Additionally, squeeze the roasted garlic into whipped labneh, and add salt and pepper to get a delicious garlicky dip.
