Baked salmon Tortiglioni in pesto peperoncino

Preparation time:10 minutes
Baking time: 10 minutes
Serves:2-3

Ingredients

  • Salmon 250 gms
  • Paprika ¼ tsp
  • Lemon juice 2 tbsp
  • Olive oil
  • Tortiglioni pasta 100 gms
  • Pesto peperoncino 3 tbsp
  • Parmesan cheese 2 tbsp
  • Salt and pepper
  • Fresh basil

Method

  1. Rub the salmon fillet evenly and rub paprika, lemon juice, salt, and pepper evenly.
  2. Drizzle olive oil, place it on a lined baking tray, and bake for 10 minutes in a preheated oven at 180 degrees. In the meantime, cook the pasta as per the instructions on the packet.
  3. Reserve a little pasta water for later. Once cooked, turn off the heat and drain the pasta. Return pasta to the pan with the sauce and toss to coat. Break the cooked salmon and add it to the pasta. Garnish with basil leaves and freshly grated parmesan cheese. Serve hot.

Ingredients

  • Chicken mince 250 gms
  • Garlic 3 pods
  • Onion 1
  • Carrot 1(diced)
  • Paprika 1 tsp
  • Fresh Rosemary and thyme (or Dried Italian herb mix) 1 tsp
  • Bolognese sauce 300 gms (more than half a jar)
  • Extra virgin Olive oil
  • Chilli flakes ½ tsp
  • Salt and pepper
  • Fresh burrata 100 gms
  • Fettuccine pasta 250 gms
  • Fresh basil

Method

  1. Heat some regular olive oil in a pan and add garlic and onion. Allow them to sizzle and flavor the oil. Add the diced carrot. Add the mince and let the carrots cook through once the carrots are soft.
  2. Mix in the herbs, paprika, Bolognese sauce, a little water, and cook.
  3. Season and cook for 5 minutes on low heat. In the meantime, cook Barilla pasta as per instructions. Combine cooked pasta with the Bolognese sauce. Serve hot with burrata, basil or parsley, chili flakes, and a drizzle of EVOO.
