Ingredients:

  • Potatoes 6-7
  • Olive oil 1/2 cup
  • Garlic 1 whole + 2 cloves
  • Fresh thyme leaves a few sprigs + extra for garnish
  • Salt and pepper
  • Feta cheese 250 gms
  • Greek yogurt or cream cheese 2 tbsp
  • Tahini 1 tsp
  • Honey ½  tsp

Method

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

In a large bowl, toss the halved baby potatoes with olive oil, garlic, fresh thyme leaves, salt, and pepper until evenly coated.

Spread the seasoned potatoes in a single layer on the prepared baking sheet, ensuring they are not too crowded to allow for even roasting.

Roast the potatoes in the pre-heated oven for 25-30 minutes, or until golden brown and tender, tossing halfway through to ensure even cooking.

While the potatoes are roasting, prepare the whipped feta. In a food processor or blender, combine the crumbled feta cheese, Greek yogurt or cream cheese, honey, tahini, and garlic Blend until smooth and creamy, adding a splash of water if needed to achieve the desired consistency. Adjust seasoning to taste.

Once the potatoes are roasted to perfection, remove them from the oven and let them cool slightly.

To serve, spoon dollops of the whipped feta onto a platter and arrange the thyme-roasted potatoes on top. Garnish with fresh thyme sprigs for an extra pop of flavor and visual appeal.
