Enter: Pecan Cinnamon Biscotti with Dark Chocolate Drizzle – the perfect sweet spot between cozy and sophisticated.
These pecan cinnamon biscotti are a delightful balance of textures and flavors. They have a satisfying crunch, with a tender crispness that holds up beautifully when dipped into coffee or hot chocolate. Preparation time: 20-25 minutes
Baking time: 30-40 minutes
Makes: 2 dozen
Ingredients:
- Unsalted butter (softened) 120 gms
- Granulated sugar 200 gms
- Eggs 2
- Vanilla extract 1 tsp
- All-purpose flour 150 gms
- Wholewheat flour 60 gms
- Baking powder 1 and ½ tsp
- Ground cinnamon ½ tsp
- Walnuts coarsely chopped 15-16
- Salt ¼ tsp
- Chopped pecans ½ cup + extra for garnish
- Dark chocolate chips (for drizzle)
Method
- Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper.
- Cream butter & sugar in a bowl until light and fluffy. Beat in eggs and vanilla. Mix dry ingredients in a separate bowl – flour, baking powder, cinnamon, and salt.
- Combine wet & dry ingredients gradually. Stir in walnuts and pecans. Shape dough into two logs (about 10 inches long, 2 inches wide).
- Place on baking sheet. Bake for 25-30 minutes until lightly golden. Let cool for 10 minutes. Slice logs diagonally into 3/4-inch pieces.
- Lay slices cut-side down on the baking sheet. Bake again for 10-12 minutes, flipping halfway, until crisp and golden. Melt dark chocolate drizzle over cooled biscotti and sprinkle crushed pecan nuts.
