Living in the UAE for the past few years has changed the way flavours speak. The Levant isn’t just a cuisine—it’s a mood, a warmth, a generosity that flows through food. Every time I style, cook, or conceptualise a dish inspired by this region, there’s a deeper connection at play. The colours, the textures, the soulful simplicity—they all tell stories that linger long after the plate is cleared.
This collection brings together some of my favourite Levant-inspired dishes from the blog—recipes that honour tradition while allowing room for gentle creativity and styling flair. They are familiar classics touched with subtle creativity, shaped by my understanding of the region and the everyday flavours I’ve grown to love and adore.

Classic Chicken Fatteh With Sumac
A timeless Levantine favourite.
Layers of crisp toasted pita, yoghurt sauce, tender chicken, and a bright sprinkling of sumac create a dish that is comforting and visually stunning. The sumac lifts the flavour with its citrusy depth, and the toasted pine nuts add the warmth and crunch we all love. Styled with height and generous drizzles of yoghurt, this dish shines beautifully at any gathering.

Muhammara With Charred Red Peppers
A dip that defines Levantine hospitality.
Smoky, sweet, tangy, and rich—this muhammara celebrates charred red peppers blended with walnuts, pomegranate molasses, garlic, and spices. The brick-red colour alone makes it a showstopper, especially when finished with olive oil and crushed walnuts. It holds its own on any mezze spread.

Roasted Eggplant With Tahini–Yoghurt Sauce & Couscous
Earthy, creamy, and beautifully balanced.
Roasting eggplant brings out its smoky softness, which pairs effortlessly with a cool, tangy tahini–yoghurt sauce. Served over light, fluffy couscous, the dish becomes a wholesome and elegant meal. Styled with pomegranate seeds, herbs, or toasted sesame, it brings both colour and comfort to the table.

Mahlabia With Fresh Figs & Honey
Silky, floral, and quietly luxurious.
Mahlabia offers a soft, delicate canvas, and topping it with fresh figs adds richness without weight. A drizzle of honey ties everything together. This dessert looks gorgeous served in glass cups, allowing the simplicity and textures to shine.

Sweet Potato Falafels
A gentle twist on a classic.
Soft roasted sweet potatoes give these falafels their warm colour and naturally sweet, earthy flavour. Crisp on the outside and tender inside, they pair beautifully with tahini, herbs, and a touch of spice. Styled with lemon wedges or microgreens, they bring a fresh, modern hue to a classic dish.

Luqaimat

Crisp on the outside, airy on the inside—these little dumplings are a joy every time. Drizzled with date syrup or honey, they capture the festive spirit of the region. A rustic bowl or a classic metal tray makes them shine even more.
Working, cooking, and styling in the UAE have been among my greatest teachers. It’s where Levantine flavours became familiar—where ingredients like pomegranate molasses, tahini, sumac, and toasted nuts became part of my everyday rhythm.
Understanding how these flavours blend, contrast, or complement each other has shaped my creative voice on the plate. There is beauty in their simplicity, warmth in their generosity, and endless inspiration in their history.
