Ingredients
- Unsalted butter, softened ½ cup
- Smooth peanut butter ½ cup
- Brown sugar ¾ cup
- Egg 1 (large)
- Vanilla extract 1 tsp
- All-purpose flour 1¼ cups
- Cornstarch 1 tbsp
- Baking soda ½ tsp
- Salt ¼ tsp
Method
- Preheat the oven to 180°C. Line a baking tray with parchment paper.
- Cream the butter, peanut butter, and brown sugar until light and smooth.
- Add the egg and vanilla, mixing just until incorporated. In a separate bowl, whisk together flour, cornstarch, baking soda, and salt.
- Fold the dry ingredients into the wet mixture until a soft dough forms. Scoop tablespoon-sized portions, roll gently, and place on the tray.
- Lightly flatten with a fork for a classic finish.
- Bake for 12–14 minutes, until the edges are set and lightly golden. Cool on the tray for a few minutes, then transfer to a rack.
