Some desserts are naturally camera-ready. They slice neatly, hold their shape, and arrive on the plate looking almost exactly as planned.

A peach blueberry crumble is not one of them.

The moment you spoon into it, the fruit begins to soften and spread. The topping breaks into uneven crumbs, the juices move across the plate, and the portion refuses to sit in a tidy shape. From a food stylist’s perspective, this makes the dessert both challenging and interesting.

The beauty of a crumble lies in its looseness. It is meant to look warm, generous, and slightly unruly. Trying to force it into a perfect slice usually takes away the very quality that makes it so comforting.

For this shoot, the scoop of vanilla ice cream became the visual anchor. Its smooth, rounded shape immediately draws the eye, while the crumble beneath it remains soft and rustic. As the ice cream begins to melt into the warm fruit, it creates glossy trails over the peaches, blueberries, and golden topping. That contrast between structure and softness is what makes the plate work.

The dessert may not hold its shape, but it holds attention.

Ingredients

For the fruit filling

  • Ripe peaches, sliced 5
  • Fresh blueberries 1½ cups
  • Brown sugar ⅓ cup
  • Cornflour 1 tablespoon
  • Lemon juice 1 tablespoon
  • Vanilla extract 1 teaspoon
  • Ground cinnamon ½ teaspoon
  • A small pinch of salt

For the crumble topping

  • Plain flour 1 cup
  • Rolled oats ¾ cup
  • Sugar ½ cup
  • Ground cinnamon ½ teaspoon
  • A pinch of salt
  • Cold unsalted butter, cubed 100 g
  • Chopped almonds or pecans, optional ¼ cup

For serving

  • Vanilla ice cream

Method

  • Preheat the oven to 180°C. Place the sliced peaches and blueberries in a large bowl.
  • Add the brown sugar, cornflour, lemon juice, vanilla, cinnamon and salt.
  • Mix gently until the fruit is evenly coated. Transfer the fruit mixture to a medium-sized baking dish and spread it into an even layer.
  • To make the crumble topping, combine the flour, oats, brown sugar, cinnamon and salt in a separate bowl.
  • Add the cold butter and rub it into the dry ingredients using your fingertips until the mixture resembles rough crumbs.
  • Some larger pieces are welcome, as they create extra texture during baking. Mix in the chopped nuts when using.
  • Scatter the crumble mixture evenly over the fruit. Avoid pressing it down, as a loose topping bakes more evenly and develops a better texture.
  • Bake for 35 to 45 minutes, or until the fruit is bubbling around the edges and the topping is golden brown.
  • Allow the crumble to rest for approximately 15 minutes before serving. This gives the fruit juices a little time to thicken, while still leaving the dessert soft and spoonable.
  • Serve warm with a scoop of vanilla ice cream.
