With all the fall recipes, warm spices, and Halloween treats slowly taking over my feed, I was a little sceptical about sharing something that feels quite this sunny and spring-like.
But I blame what’s in my refrigerator and pantry.

There were lemons waiting to be used, and somehow that was enough to send me in a completely different direction from everything pumpkin, cinnamon and autumn. And, after baking and eating this lemon loaf cake, I have absolutely no regrets.
I have always been a citrus person. Anything fresh, zesty, and properly lemony immediately appeals to me. This loaf has that lovely balance I enjoy in a simple cakeโa soft, buttery crumb with enough lemon to keep every bite fresh rather than overly sweet.
You can absolutely pour a lemon syrup over the warm cake if you love an extra-moist, intensely citrusy loaf. I actually enjoyed mine without it. Sometimes I want a cake to remain just that: soft, buttery, uncomplicated and perfect beside a cup of tea.
And perhaps that is why I enjoyed this one so much.
It had been a long day for all four of us. Once everyone was finally home, we gathered around for our usual cup of tea. The kids had their slices of lemon cake with glasses of warm milk.

It is a small ritual in our home that I have grown to really love. Whenever everyone is home at the same time, we spend 15โ20 minutes together, just chatting and sharing little bits about our day. Then everyone disappears againโhomework, workouts, dinner preparation, and everything else that fills an ordinary evening.
But we all look forward to those few minutes together.
And on this particular day, a thick slice of homemade lemon loaf cake made them even better.
Lemon Loaf Cake
Makes: 1 loaf
Prep time: 15 minutes
Bake time: 45โ55 minutes
Ingredients
- 200 g sugar
- 2 tablespoons finely grated lemon zest
- 3 large eggs
- 115 ml olive oil
- 1 teaspoon vanilla extract
- 1ยฝ teaspoons fresh lemon juice
- 200 g Greek yogurt
- ยผ teaspoon turmeric
- ยฝ teaspoon salt
- 1 teaspoon baking powder
- ยผ teaspoon baking soda
- 220 g all-purpose flour
Method
- Preheat the oven to 175ยฐC. Grease and line a standard loaf tin with baking paper. Add the sugar and lemon zest to a large bowl.
- Rub them together gently with your fingertips for a minute or two. This helps release the natural oils from the zest and gives the cake a much more fragrant lemon flavour. Add the eggs and whisk until the mixture becomes slightly pale and airy.
- Slowly pour in the olive oil while whisking, followed by the vanilla extract and lemon juice. Add the Greek yogurt and whisk until smooth and fully combined. In a separate bowl, mix the flour, turmeric, salt, baking powder, and baking soda.
- Add the dry ingredients to the wet mixture and fold gently until just combined. Avoid overmixing, as you want the loaf to stay soft and tender. Pour the batter into the prepared loaf tin and smooth the surface.
- Bake for approximately 45โ55 minutes, or until the top is golden and a skewer inserted into the centre comes out clean or with a few moist crumbs attached. Allow the loaf to cool in the tin for about 10โ15 minutes before transferring it to a wire rack to cool completely.
- The tiny amount of turmeric gives the loaf a naturally warm yellow tone without affecting the flavour, while the Greek yogurt keeps the crumb moist and tender.
- You can finish the loaf with a lemon syrup if you prefer something sweeter and more intensely citrusy, but I actually love this cake just as it isโsoft, fragrant and fresh, with the olive oil and yogurt giving it a beautifully moist texture.
- Serve it in thick slices alongside tea, coffee, or a warm glass of milk.
