Something about the changing seasons that goes beyond the weather. Sometimes, you notice it in the shorter days, the softer evening light, or the sudden appearance of pumpkins everywhere. And sometimes, rather unfortunately, it announces itself through an endless round of seasonal infections.

The past two weeks have been exactly that in our home.
With viral infections making their way through the house, the past fortnight has been exhausting. As a mother, there are few things more disheartening than watching your children struggle with fever, lose their appetite, and spend restless nights unable to sleep comfortably. Add to that missed school days, interrupted routines, and the constant worry that comes with having unwell children, and everything begins to feel a little gloomy.
But thankfully, things are looking brighter now.
The nights have become more peaceful, the days are clearer, and the house is slowly returning to its usual rhythm. Laughter is back, little conversations fill the table, and the familiar sound of children asking what there is to eat returns. After two difficult weeks, even these ordinary moments feel particularly special.
And somewhere in between all of this, I realised just how noticeably shorter the days had become. Even here in the UAE, where autumn doesn’t arrive with dramatically changing leaves and chilly mornings, you can sense that the season is shifting.
And I knew it was pumpkin time!
Not that I needed a particularly good excuse to make something cute in the kitchen.
These adorable pumpkin-shaped bread rolls have been on my baking list for a while. They are soft, fluffy, beautifully golden, and surprisingly easy to make. And despite their appearance, there is no pumpkin in the dough!
I used a little turmeric to give them their lovely golden colour instead of artificial food colouring. Just a small amount does the trick without making the flavour too prominent.
The shaping is probably the most enjoyable part. A few pieces of kitchen twine transform ordinary dough balls into the cutest little pumpkins. Watching them puff up in the oven is quite satisfying, especially when those lovely pumpkin ridges begin to take shape.
And when the kids saw them, there were smiles. Exactly what I had been hoping for.
We enjoyed these warm, soft pumpkin buns with bowls of comforting soup. Nothing elaborate, nothing particularly fancy. Just homemade bread, cozy soup, and everyone finally feeling well enough to enjoy a meal together.
Sometimes, that’s all you need.
So, if you are looking for a little autumn baking inspiration, these soft pumpkin-shaped bread rolls are worth trying. They look lovely on a festive table, make wonderful accompaniments to soups and stews, and are just as delicious with a little butter.
And honestly, they are almost too cute to eat. Almost!

Prep time: 20โ25 minutes
Proofing time: Approximately 1ยฝโ2 hours
Baking time: 18โ22 minutes
Servings: 10-12 bread rolls
Ingredients
For the dough:
- 450 g all-purpose flour (maida)
- 220 ml lukewarm milk
- 8 g instant yeast
- 30 g sugar
- 5 g salt
- 45 g unsalted butter, softened
- ยฝย teaspoon turmeric powder
- Cheddar cheese (cubed) 100 g
For finishing:
- 1 egg
- 1 tablespoon milk
- Pumpkin seeds or small cinnamon sticks for decorative stems
- A little melted butter for brushing after baking (optional)
You will also need:
- Oven-safe, food-safe cotton kitchen twine
- A little oil for greasing the twine
Method
- Take about a tablespoon of the lukewarm milk from the measured quantity and mix it with the turmeric powder until evenly dispersed. Add it back to the remaining milk and stir well. The turmeric gives the dough a lovely golden-yellow colour without the need for artificial colouring.
- In a large mixing bowl, combine the all-purpose flour, instant yeast, sugar, and salt. Pour in the turmeric milk and mix until a rough dough forms. Add the softened butter and knead for approximately 8โ10 minutes, or until the dough becomes smooth, soft, and elastic. You can also use a stand mixer fitted with a dough hook.
- The dough should feel soft and slightly tacky but not excessively sticky. Avoid adding too much extra flour, as this can make the rolls dense. Shape the dough into a ball and place it in a lightly greased bowl. Cover with a clean kitchen towel or cling film and leave in a warm place for approximately 60โ90 minutes, or until doubled in size. Once the dough has risen, gently punch it down to release the air.
- Divide it into 10-12 equal portions, stuff it with a cube of cheddar cheese, and shape each portion into a smooth, round ball. Try to create a little surface tension while shaping. This helps the buns hold their rounded appearance during baking.
- Cut four lengths of food-safe cotton kitchen twine for each dough ball. Lightly coat the twine with oil to prevent it from sticking to the bread. Arrange the twine around each dough ball so that it divides the surface into eight sections, resembling the natural ridges of a pumpkin.
- Tie the twine loosely beneath or on top of the dough, leaving enough room for the bread to expand during proofing and baking. Avoid tying it too tightly, as the dough will continue to rise. Place the shaped dough balls on a parchment-lined baking tray, leaving enough space between them. Cover loosely and allow them to proof for another 25โ40 minutes, until noticeably puffy.
- Preheat the oven to 180ยฐC (conventional setting). Whisk together the egg and tablespoon of milk to prepare the egg wash. Gently brush the rolls with the egg wash, taking care not to disturb the twine. Bake for approximately 18โ22 minutes, or until the rolls are beautifully golden brown and cooked through.
- Remove the rolls from the oven and allow them to cool slightly. Carefully cut and remove the kitchen twine. Avoid pulling it forcefully, as this may tear the soft crust. If desired, brush the warm rolls with a little melted butter for a softer, glossy finish.
- Insert a pumpkin seed or a small cinnamon stick into the centre of each roll to create a decorative pumpkin stem. Remove any non-edible decorations before eating. Serve warm with butter, soup, or your favourite savoury spread.
A Few Tips for Perfect Pumpkin-Shaped Bread Rolls
Keep the dough soft. All-purpose flour works beautifully for this recipe. The key is to knead it until smooth and elastic without adding excessive flour.
Don’t overdo the turmeric. A quarter teaspoon is sufficient for a gentle golden hue. Too much turmeric can introduce a slightly bitter, earthy flavour.
Give the dough room to rise. The kitchen twine should guide the shape rather than restrict the dough completely.
Keep the rolls relatively small. Smaller dough balls tend to retain their pumpkin shape better and develop more attractive ridges.
Enjoy them fresh. These buns are particularly delicious on the day they are baked, while the interiors are soft and fluffy.
