Delicate, buttery cookie sticks infused with rose and pistachio, finished with a drizzle of white chocolate. A little contemporary, a little festive, and irresistibly pretty.

I wanted to make something a little different from the usual cookies. Something that felt contemporary but still carried familiar flavours. Rose and pistachio are such a beautiful combination, especially in Indian and Middle Eastern desserts. They have a certain elegance, and pairing them with buttery cookies and white chocolate felt like a natural choice.
But what I love most about these cookies is their shape. Long, slender sticks with a drizzle of white chocolate and a scattering of crushed pistachios, they remind me of fuljhari, those beautiful sparklers we light during Diwali celebrations. That resemblance feels nostalgic, even though the cookies themselves have a rather modern look.
And perhaps that is what makes them so special. They bring together traditional flavours, a little festive nostalgia, and a contemporary presentation.
These cookie sticks are perfect for an afternoon treat. Serve them alongside a steaming cup of hot chocolate for the kids, or with a comforting cup of tea for the grown-ups. They are just the right size for a little indulgence without committing to an entire dessert.
I also think they would make lovely edible gifts. A handful of these sticks arranged neatly in a box, perhaps tied with a delicate ribbon, would be such a thoughtful homemade treat.
I absolutely loved making these. From shaping the dough into slender sticks to adding those final ribbons of white chocolate, the entire process was rather therapeutic. And I am enjoying one right now as I type this blog post. A little crumbly, beautifully fragrant, and just sweet enough!

Rose Pistachio Cookie Sticks Recipe
Prep: 20 minutes
Chill: 30 minutes
Bake: 12โ15 minutes
Makes : (approximately) 22โ26 cookie sticks
Ingredients
- 150 g unsalted butter, softened
- 80 g icing sugar
- 1 tsp rose water (food grade)
- ยฝ tsp vanilla extract
- 200 g all-purpose flour
- 40 g finely ground pistachios
- ยผ tsp salt
- 1โ2 tbsp milk, only if required
For the decoration
- 100 g white chocolate, melted
- 2โ3 tbsp finely chopped pistachios
- 1 tbsp dried edible rose petals, lightly crushed (optional)
Method
- In a mixing bowl, cream the softened butter and icing sugar until smooth and light. Add the rose water and vanilla extract, mixing until combined.
- In another bowl, combine the flour, ground pistachios, and salt. Gradually fold the dry ingredients into the butter mixture until a soft dough forms.
- If the mixture feels too crumbly to hold together, add a little milk, one teaspoon at a time. Avoid overmixing to keep the cookies tender and buttery. Place the dough between two sheets of parchment paper and roll it into a rectangle approximately 1 cm thick.
- Chill for 30 minutes, until firm. Using a sharp knife or pizza cutter, cut the dough into slender sticks approximately 10โ12 cm long and 1โ1.5 cm wide.
- Carefully transfer them to a baking tray lined with parchment paper, leaving a little space between each stick. Preheat the oven to 170ยฐC (conventional) or 160ยฐC (fan).
- Bake for approximately 12โ15 minutes, or until the edges are very lightly golden. The cookies should remain fairly pale. Let them cool on the tray for 5 minutes before transferring them to a wire rack.
- They will firm up as they cool. Once the cookies are completely cool, melt the white chocolate gently using a double boiler or microwave in short intervals.
- Transfer the melted chocolate into a small piping bag and drizzle thin, irregular lines over the cookie sticks. Alternatively, dip one end of each stick into the melted chocolate.
- Immediately sprinkle with finely chopped pistachios and a few crushed edible rose petals. Allow the chocolate to set completely before serving.
A Few Tips for Perfect Cookie Sticks
- Keep the dough chilled. This helps the cookie sticks maintain their neat, slender shape while baking.
- Use rose water sparingly. The floral flavour should be delicate rather than overpowering.
- Finely grind the pistachios. Coarse pieces can make the dough difficult to cut into clean sticks.
- Wait until the cookies are completely cool. Otherwise, the white chocolate drizzle may melt and lose its definition.
- For gifting, place the finished sticks in a parchment-lined airtight box, separating layers to protect the decoration.

They are festive without being overly elaborate, sweet without being overwhelming, and pretty enough to find their way onto a dessert platter.
Sometimes the most enjoyable recipes are the ones that don’t demand an occasion. They simply make an ordinary afternoon feel a little special.
And if you are wondering whether I have reached for another cookie while finishing this post, the answer is yes!
Happy baking!
