The definitive reason to Blog!!

Writing a blog post makes me happy. It’s like talking to people I don’t know yet and I feel connected. When a part of me wants to be somewhere else I start writing my blog, it is kind of empowering. At times I feel it’s the best job in the world. I know it’s not a job but I love writing my thoughts, my feelings out on a paper/keyboard.

When I started blogging I could hardly find things to say, I would wait hours in front of the screen or with a pen to scribble something. I thought to myself why am I so scared. Why am I scared to put myself out there for others to judge. I am not very good when it comes to being vocal about my feelings.

But things started changing. Yes I struggled to manage my time, with a kid sometimes you need to make choices which might seem hard on yourself. Anyways with age we learn to balance and find time for things we love. One thing that makes my life easy is meal prep. Yes it includes a lot of hard work on a weekend evening, but keeps me relaxed for the rest of the week.

Since my son loves trying out new sauces with his pasta, I get inspired to create new combinations with vegetables to give him a balanced diet. This pumpkin sauce just makes life easy. It’s creamy, perfectly sweet with a hint of spice. With a few ingredients it can be a perfect base for a gravy.

Recipe for Pumpkin Sauce

 

Preparation time: 20 min
Serves : 3-4
Cooking time: 10 min

Ingredients

Pumpkin 600 gms
Onion 1 (chopped)
Garlic 3 cloves
Parika ½ tsp
Tomato puree 2 tbsp
curry powder 1/8 tsp (optional)
Salt and black pepper

Method

  1. Heat oil in a pan add the chopped onions and garlic. Once they are slightly fragrant add the chopped pumpkin.
  2. Now add paprika, tomato puree, curry powder, salt and pepper. Add water, little at a time
  3. Once everything is cooked through, let it cool
  4. Blend into a smooth sauce with a little water if needed.
