Pumpkin French Toast is our current weekend treat/breakfast. Pumpkin works its magic with cinnamon and bread.
I paired these delicious French toasts with whipped cream, fresh berries, and a cup of coffee. What an excellent start to the day!
I like it a tad bit more than the regular French toast. Pumpkin adds to the flavor and color. The choice of bread is essential. I love using Brioche bread, Challah and occasionally use the regular milk bread. For this recipe, I used Brioche bread.
The warm spices like cinnamon, nutmeg, and ginger take me to a happy place in my mind. My grandma made French toast for me. She would make them for guests and save a few slices for me. We enjoyed them as such or with some honey.

Ingredients
- Brioche bread slices 5
- Pumpkin puree 2 tsp (canned)
- Cinnamon powder 1 tsp
- Nutmeg powder ¼ tsp
- Ginger powder ⅛ tsp
- Jaggery powder 1 tbsp
- Milk ½ cup
- Eggs 2
- Maple syrup
- Whipped cream
- Berries
Method
- Whisk together the eggs, milk, jaggery, spices, and pumpkin puree. Heat a pan with little oil and a small amount of butter.
- Dip the bread slices into the egg mixture and place them on the hot pan.
- Flip after a few seconds once that side is lightly caramelized. Serve warm with whipped cream, berries, and a drizzle of maple syrup.
I can see how this would quickly become a seasonal favorite for many!
