Craving for something light and refreshing for your lunch. Here is a straightforward salad that can serve as a side too. This radish summer salad with lemon honey vinaigrette is a delight. Radish is an underrated vegetable, but it is delicious, and I love it for that sharp taste. From a stylist’s point of view, I like using it as it adds a pop of color and has beautiful, well-defined edges.
Table red radish, which is readily available and cheap, is perfect for this recipe. The dressing is a sweet lemony vinaigrette to balance the sharpness of radish. You may use a mandoline slicer or a sharp knife to get the paper thin slices.
I have added radish to my salads and soups, but this is my first time where radish is the star. The styling is minimal, and I tried to play with the colors of the ingredients used in the salad, pink being dominant.
