One such beautiful salad that embodies the essence of spring is the Orange Grapefruit Salad with Feta Cheese, drizzled with a zesty Lemon Herb Vinaigrette. This salad celebrates the seasonal bounty and provides a light and refreshing option for those breaking their fast.
The combination of citrus fruits like oranges and grapefruits adds a burst of tangy sweetness, perfectly complemented by the creamy saltiness of feta cheese. Creamy avocado adds healthy fats and pomegranate arils bring in a burst of sweetness. Together, they create a harmonious blend of flavors and textures that dance on the palate with each bite.

Ingredients
- Oranges 3
- Grapefruit 2
- Arugula leaves handful
- Avocado 1
- Pomegranate 3-4 Tbsp
- Feta cheese (crumbled) 3 Tbsp
- Mint leaves
Dressing
- Olive oil ¼ th cup
- Honey 1 tbsp
- Lemon juice 2 tbsp
- Lemon zest
- Salt and pepper
- Chopped parsley
Method
- In a large bowl, toss together the mixed salad greens, sliced oranges, sliced grapefruits, pomegranate arils, avo slices, torn mint leaves, and chopped parsley.
- In a separate small bowl, whisk together the olive oil, lemon juice, honey, salt, pepper, and chopped herbs until well combined.
- Drizzle the Lemon Herb Vinaigrette over the salad and toss gently to coat. Add crumbled feta on top.
- Serve the salad immediately and enjoy a burst of freshness with each bite.
