A recipe that turns something as humble as mashed potatoes into a plated showpiece.

Sweet potatoes are naturally softer and more delicate than regular potatoes, which makes them slightly tricky to pipe. Adding one regular potato creates just enough structure to hold those beautiful swirls without compromising the flavor. Skipping cream keeps the texture light while butter and egg yolk bring richness and that classic golden finish. Rosemary adds depth—a subtle, aromatic note that balances the sweetness from the potatoes.

Pair these duchess potatoes with dips like garlic labneh or a light yogurt herb sauce. These work beautifully as an appetiser, especially for brunches, festive tables, or styled grazing boards.

Ingredients

  • Sweet potatoes 2 medium
  • Regular potato (for binding) 1 medium
  • Egg yolks 1
  • Butter (melted) 3 tbsp
  • Finely chopped fresh rosemary 1 tsp
  • Garlic clove (finely grated) 1
  • Parmesan cheese, finely grated ¼ cup
  • Cheddar cheese, finely grated ½  cup
  • Salt, to taste
  • Black pepper, to taste

Optional:

  • Extra melted butter for brushing

Method

  1. Peel and chop both sweet and regular potatoes. Boil until soft and fully cooked.
  2. Drain well and allow excess moisture to evaporate. Mash until completely smooth—this is key for clean piping and defined ridges.
  3. Add butter, egg yolks, rosemary, grated garlic, Parmesan, cheddar, salt, and pepper. Mix until smooth and slightly thick.
  4. The cheese will help firm up the mixture as it bakes.
  5. Transfer to a piping bag fitted with a star nozzle. Pipe rosettes or swirls onto a lined baking tray.
  6. Lightly brush with butter and bake at 200°C for 18–22 minutes, until golden with crisp edges and lightly caramelised tips.
