Paneer, Saffron and Pistachio Sandesh Modak

After making the classic steamed modak, I wanted to create another versionโ€”this time with a sweet that has always been close to my heart.

Sandesh easily tops that list.

Traditional sandesh is made with fresh chhena, but for this version I wanted something quicker and simpler, so I used paneer instead. Combined with saffron, pistachios, milk, and condensed milk, it turns into a beautifully rich mixture that is soft, milky, and delicately fragrant.

And then, of course, shaping it into modaks makes it feel instantly festive. I love recipes that take something familiar and present it in a slightly different way. Sandesh already carries so much nostalgia for me, while the modak shape immediately brings the spirit of Ganesh Chaturthi to the table.

There is something so beautiful about saffron and pistachio together. The warm golden colour from the saffron, the little flecks of green pistachio, and the creamy white paneer already make the sweet look special even before any decoration is added. A tiny touch of edible silver leaf takes it into celebration territory.

These are rich, so I like making them quite small. One or two alongside a cup of tea feels just right.

Paneer, Saffron and Pistachio Sandesh Modak

Makes: approximately 10โ€“12 small modaks
Preparation time: 10 minutes
Cooking time: 12โ€“15 minutes

Ingredients

  • 200 g paneer, finely grated or crumbled
  • ยฝ cup condensed milk
  • ยฝ cup milk powder
  • 2 tbsp warm milk
  • A generous pinch of saffron
  • 2 tbsp finely chopped pistachios
  • 1โ€“2 tbsp ghee, divided
  • ยผ tsp cardamom powder, optional
  • Edible silver leaf or varak, for garnish
  • Extra chopped pistachios, for garnish

Method

  1. Soak the saffron in the warm milk for about 10 minutes, allowing the milk to develop a beautiful golden colour and fragrance.
  2. Heat a non-stick pan over very low heat. Add the condensed milk, saffron-infused milk, and milk powder. Add about 1 tablespoon of ghee and stir continuously until everything is smooth and well combined.
  3. Continue cooking over low heat for a few minutes. The mixture will gradually begin to thicken. Add the chopped pistachios followed by the finely grated or crumbled paneer. Add the cardamom powder at this stage if using. Keep stirring and folding the mixture over very low heat.
  4. As the paneer absorbs the milk mixture, everything will begin to come together. Add a little more ghee if the mixture feels too dry or starts sticking excessively to the pan.
  5. Cook until the mixture leaves the sides of the pan and comes together almost like a soft lump. It should still feel slightly sticky rather than completely dry.
  6. Transfer the mixture to a plate and let it cool until it’s comfortable to handle. Lightly grease the inside of a modak mould with ghee.
  7. Take a portion of the sandesh mixture and press it firmly into the mould, making sure all the grooves are filled. Close the mould, press gently, and remove any excess mixture from the bottom.
  8. Carefully open the mould and release the modak. Repeat with the remaining mixture. Decorate the sandesh modaks with tiny pieces of edible silver leaf and chopped pistachios.
  9. Chill briefly before serving if you prefer a slightly firmer texture.

A Few Tips

Use paneer that is fresh and relatively soft. If it feels very firm, grate it as finely as possible before adding it to the mixture.

Keep the heat low throughout. High heat can make the milk mixture catch at the bottom of the pan and may also make the paneer grainy or dry.

Do not overcook the sandesh. The mixture should hold together but still retain some softness. It will firm further as it cools.

Greasing the mould lightly with ghee makes releasing the delicate modaks much easier.

Store the modaks refrigerated in an airtight container and enjoy them within 2โ€“3 days.
