Some days deserve a treat, and the first day of summer break felt like exactly that kind of day.
The UAE heat had officially settled in, the kind that makes stepping out feel like a serious commitment. So instead of going anywhere, I decided to make something playful, crispy, spicy, creamy, and completely worth staying home for — dynamite shrimp served on crispy fried glutinous rice rectangles.
This dish is a little dramatic in the best possible way. You get a golden, crunchy rice base, topped with juicy shrimp coated in a creamy spicy dynamite sauce. It has texture, heat, comfort, and that restaurant-style presentation that makes even a stay-at-home afternoon feel special.
As a food stylist, I love recipes that allow contrast on the plate. The crisp rectangular rice base gives structure and height. The creamy shrimp sits beautifully on top, and a final garnish of spring onions, sesame seeds, or microgreens adds freshness and movement. It is the kind of appetizer that looks impressive but is actually very doable at home.

Dynamite Shrimp on Crispy Glutinous Rice Rectangles

Ingredients
For the Crispy Glutinous Rice Base
- Glutinous rice / sticky rice, 1 cup
- Water 1 ¼
- Salt ½ teaspoon
- Sesame oil, ½ teaspoon
- Oil, for frying
For the Shrimp
- Shrimp, peeled and deveined, 300 g
- Salt ½ teaspoon
- Black pepper, ½ teaspoon
- Garlic powder, ½ teaspoon
- Paprika ½ teaspoon
- Egg white 1
- Cornflour ½ cup
- Oil, for frying
For the Dynamite Sauce
- Mayonnaise ¼ cup
- Sriracha 2 tablespoons
- Sweet chilli sauce, 1 tablespoon
- Honey 1 teaspoon
- Garlic powder ½ teaspoon
For Garnish
- Chopped spring onions
- Sesame seeds
- Extra spicy mayo, for drizzling
Method
- Rinse the glutinous rice several times until the water runs almost clear. Soak it for at least 2 hours, or overnight if possible. Drain the rice and cook it with water and salt until tender and sticky.
- Once cooked, add sesame oil while the rice is still warm. Line a small tray or square dish with baking paper. Transfer the cooked rice into the tray and press it down firmly into an even layer.
- The rice should be compact; otherwise it may fall apart while frying. Cover and refrigerate for at least 2–3 hours, or until completely firm.
- Once chilled, lift the rice slab from the tray and cut it into neat rectangles. Heat oil in a pan and shallow fry the rice rectangles until golden and crispy on all sides. Place them on kitchen paper to drain.
- The outside should be crisp and golden, while the inside should remain slightly soft and chewy. Pat the shrimp dry with kitchen paper.
- Season with salt, pepper, garlic powder, and paprika. Add the egg white and mix well. Coat each shrimp in cornflour (which is seasoned), shaking off the excess.
- Fry the shrimp in hot oil until crisp and cooked through. This should only take a few minutes. Do not overcook the shrimp, as they can turn rubbery quickly. In a bowl, mix mayonnaise, sriracha, sweet chilli sauce, honey, and garlic powder.
- Taste and adjust the heat according to your preference. Add more sriracha for extra spice or more honey if you prefer a slightly sweeter sauce.
- Toss the fried shrimp gently in the dynamite sauce until well coated. Place one or two dynamite shrimp on each crispy rice rectangle. Drizzle with a little extra sauce and garnish with spring onions, sesame seeds, and microgreens. Serve immediately while the rice is still crisp.

Serving Ideas
This dynamite shrimp with crispy rice makes a beautiful appetizer for a dinner party or a weekend snack. It can also be served as part of a small Asian-inspired spread with cucumber salad, edamame, chilli garlic noodles, or fresh summer drinks.
It is rich, so a small portion goes a long way. That is why the crispy rice rectangle works so well — it turns the dish into a composed bite rather than a heavy plate.
Final Thoughts
The first day of summer break, the heat outside, and the slow feeling of being stuck at home somehow called for something indulgent.
This dish was exactly that.
