There are very few meals that get an instant yes from everyone in my family, but noodles are definitely one of them. Whether they are stir-fried, tossed in a simple sauce, or served with something spicy, a bowl of noodles rarely disappoints at our table.

And then, thanks to social media, I came across Dan Dan noodles. It still amazes me how often social media introduces us to dishes we may otherwise never have thought of making at home. Some disappear from my mind almost immediately, but others become part of our regular kitchen rotation.
These chicken Dan Dan noodles with peanut sauce and chili oil have definitely fallen into the second category.
Creamy, spicy, savoury and ridiculously comforting, they come together quickly enough for a weekday meal but still feel a little special when placed on the table.
And considering how much my family already loves noodles, I probably should have known this one would be a hit.
Of course, the traditional Sichuan version has its own distinctive combination of sesame paste, preserved vegetables, Sichuan peppercorns, and chili oil. My version is a much simpler, family-friendly take inspired by those flavours. I use peanut butter as the base of the sauce, which makes it beautifully creamy and also means I usually have everything I need already sitting in my pantry.

What I particularly love about this recipe is how little effort it takes. The noodles are simply cooked and tossed through a creamy, salty, slightly sweet, and spicy peanut sauce. Then you pile on your choice of topping—chicken, beef, or even crumbled tofu would work beautifully—and finish everything with a generous drizzle of chili oil.
It is one of those recipes where the final bowl looks like you have put in much more effort than you actually have.
For this version, I cooked minced chicken with garlic, ginger and soy sauce until nicely browned. I like leaving a few slightly caramelised bits because they add another layer of texture against the soft noodles and silky peanut sauce.
And then comes my favourite part: the chili oil.
A little drizzle gives you gentle heat, but if you love spice, don’t be shy. That glossy red chili oil running through the creamy noodles not only tastes wonderful; it also makes the bowl look irresistible.
Easy Chicken Dan Dan Noodles

Ingredients
For the noodles
- Noodles – wheat noodles, ramen or udon-style noodles, 300 g
- Spring onions, finely sliced, 2
- Sesame seeds, for garnish
- Chili oil, for drizzling
For the chicken
- Chicken mince, 350 g
- Sesame oil or neutral cooking oil, 1 tablespoon
- Garlic cloves, finely chopped: 2 garlic cloves
- Freshly grated ginger, 1 teaspoon
- Soy sauce, 1½ tablespoons
- Brown sugar or honey: 1 teaspoon
- Rice vinegar: 1 teaspoon
- Crushed chili flakes, optional: ½ tablespoon
- Freshly ground black pepper
Peanut-Gochujang Sauce
- Smooth peanut butter: 4 tablespoons
- Gochujang 1 tablespoon
- Soy sauce: 2 tablespoons
- Rice vinegar: 1 tablespoon
- Sesame oil: 1 tablespoon
- Honey or brown sugar: 1 teaspoon
- Clove, finely grated
- Grated ginger: 1 teaspoon
- Chili oil, plus more for drizzling: 1 tablespoon
- Crushed Sichuan peppercorns, optional: ½ teaspoon
- Hot noodle cooking water, 4–6 tablespoons
Method
- Heat the sesame oil in a frying pan over medium-high heat. Add the minced chicken and cook, breaking it apart with a wooden spoon. Let the chicken sit against the hot pan occasionally so that some of it becomes nicely browned rather than simply steaming.
- Add the garlic and ginger and cook for another minute. Stir in the soy sauce, brown sugar, rice vinegar and chili flakes.
- Continue cooking for another 2–3 minutes until the chicken is cooked through and slightly caramelised. Season with a little black pepper and keep warm.
- Cook the noodles according to the packet instructions. Before draining them, reserve about ½ cup of the hot cooking water.
- Add the peanut butter, gochujang, soy sauce, rice vinegar, sesame oil, honey, garlic, ginger, and chili oil to a large bowl. Whisk everything together, then gradually add the hot noodle cooking water until the sauce becomes smooth, glossy, and loose enough to coat the noodles.
- Heat some oil in a pan and add the garlic. Let it sizzle for a few seconds and add the sauce mixture. I kept the sauce and noodles separately for photography purposes; however, for serving, go ahead and toss the hot noodles directly into the sauce.
- Toss well until every strand is covered in that creamy, savoury sauce.
- Divide the noodles between serving bowls. Spoon the cooked chicken generously over the top, followed by sliced spring onions and sesame seeds. And finally, drizzle over the chili oil.
