Peach Posset with Honey, Thyme and Peach Compote

This is probably my last peach recipe for the season, and it felt right to end with something simple, elegant, and a little magical.

Peaches are one of those fruits that hardly need much work. Their colour, fragrance and natural sweetness already do most of the styling for you. For this dessert, I scooped out the centres of halved peaches and turned the fruit into a quick compote. Then I filled the peach halfway with the compote and topped it with a silky lemon posset made with heavy cream, honey and thyme.

The cream sets surprisingly quickly, creating a beautiful contrast with the soft peach underneath. The honey adds sweetness, the lemon adds freshness, and the thyme adds a subtle herbal note.

One thing to keep in mind: this dessert is best enjoyed within a few hours of making it. Once filled, the fresh peaches gradually release water, so I would prepare these close to serving time rather than leaving them overnight.

Ingredients

  • 6 ripe but firm peaches
  • 350 ml heavy cream
  • 4 tbsp honey, or to taste
  • 2 tbsp sugar
  • 2โ€“3 sprigs fresh thyme
  • 3 tbsp fresh lemon juice

Method

  1. Cut the peaches in half and remove the stones. Using a teaspoon or melon baller, carefully scoop out some of the flesh from the centre of each peach half, leaving enough fruit around the edges so that the peach keeps its shape.
  2. Finely chop the scooped-out peach flesh. Add it to a small saucepan with the honey and lemon juice.
  3. Cook over low to medium heat for around 5โ€“7 minutes, stirring occasionally, until the peaches soften and become slightly jammy. Remove from heat and allow the compote to cool completely.
  4. Arrange the peach halves on a tray or serving plate and spoon a little of the cooled compote into each one, filling them roughly halfway. Add the heavy cream, honey, and thyme sprigs to a saucepan.
  5. Bring gently to a simmer and cook for around 3โ€“4 minutes, stirring occasionally. Do not let the cream boil aggressively. Remove from the heat and leave the thyme to infuse for another minute or two.
  6. Remove the thyme sprigs, cover, and let it infuse.
  7. Place the pan over heat and add the lemon juice slowly. You will notice the cream beginning to thicken almost immediately.
  8. Allow it to cool for a few minutes, then carefully spoon or pour the posset over the peach compote until the peach halves are filled.
  9. Transfer to the refrigerator and chill for around 1โ€“2 hours, or until the cream has set. Finish with a few fresh thyme leaves, a very small drizzle of honey, or thin slices of fresh peach.
  10. Serve chilled.

A Few Notes

Choose peaches that are ripe but still fairly firm. Very soft peaches can collapse once they are hollowed out and may release more liquid.

Make sure the peach compote is completely cool before adding the cream mixture.

The lemon juice is what helps the cream set, so add it only after the cream has been removed from the heat.

Most importantly, serve these within a few hours of preparing them. The posset itself holds beautifully, but the fresh peach shell will gradually release moisture if left for too long.
