Roasted bell pepper guacamole, salsa and Kubbus chips

A weekend night with dip and chips sounds fantastic, right? It gets even better when everything is homemade and healthy. Our Friday movie night got perfect with some roasted bell pepper guacamole, cherry tomatoes, salsa, and chips.

We all are a fan of chunky guacamole, and I stick to the classic. However, I wanted to take it a notch up in terms of flavors. Adding oven-roasted bell pepper and garlic did the trick. Along with the pepper, you can throw in the (pita or Arabic) bread to get crispy chips. All done under 30 minutes. A friend of mine taught me to make these chips. They are simple and need olive oil, salt, and some dried herbs if you like. 

As little fella watches animation movies, we get excited when there is a new kids movie. I look forward to this and enjoy some quality time with each other at home. And good food makes it better. What do you think?

Recipe of Roasted Bellpepper Gaucamole

Preparation time: 10 minutes
Cooking time: 10-15 minutes
Serves: 1-2

Ingredients

Roasted bell pepper guacamole 

  • Bell pepper 1
  • Garlic 4
  • Avocado 1
  • Onion 1
  • Coriander leaves 1/2 cup.
  • Cumin Powder 1/4 tsp
  • Cherry tomatoes 10
  • Salt and pepper 
  • Olive oil
  • Lemon juice 1 tbsp
  • Chili fresh 2

For Cherry tomatoes salsa

  • Cherry tomatoes 100 gms
  • Onion 1
  • Garlic 2 
  • Lemon juice 1 tbsp
  • Salt and pepper

For crackers/chips

  • Arabic bread or Khubus 4-5
  • Olive oil 3 tbsp
  • Salt
  • Dried herbs (optional) 2 tbsp

Method:

  1. Clean and pat dry the bell pepper. Rub some oil on the pepper and garlic cloves.
  2. Place the whole or roughly chopped pepper on a baking tray along with the garlic and roast them for 3-4 minutes in the bottom rack at 160 degrees.
  3. Once the skin is partly charred, take them out of the oven and pulse in a blender with onion and chilies to get a coarse mixture. Mash the avocado with salt and cherry tomatoes.
  4. Add the roasted bell pepper mixture, lemon juice, olive oil, cumin powder and chopped coriander leaves. Give it a good mix. 

For Salsa 

  1. Place the chopped tomatoes, garlic, chili, coriander, and onion in a mixing bowl.
  2. Add in the lemon juice, salt, and pepper. Mix everything well and serve.

For Kubbus/Arabic bread chips

  1. Tear open the bread and spray or brush olive oil on the two halves evenly. Use kitchen scissors to give the desired shape.
  2. Sprinkle salt and dried herbs. Bake in the oven for a couple of minutes or bake for 50 seconds on high heat in a microwave oven.
