Serves: 8 large or 15-16 medium
Ingredients:
- Unsalted butter, softened 225 g
- Brown sugar 150 g
- White sugar 100 g
- Egg 1 + 1 egg yolk
- Vanilla extract ¼ tsp
- All-purpose flour 280 g
- Baking soda 1 tsp
- Baking powder ½ tsp
- Salt 1/2 tsp
- Instant coffee ½ tsp
- Dark chocolate chips 200 g
- White chocolate chips 100 gms
Salt flakes (optional)
Method:
- Preheat oven to 180°C (350°F). Line a baking tray with baking paper.
- Cream butter and sugars until light and fluffy. Beat in the egg and egg yolk one at a time, then add the vanilla extract and coffee.
- Whisk the dry ingredients in a separate bowl and gradually fold them in.
- Stir in the chocolate chips.
- Drop spoonfuls of dough onto the tray and refrigerate for one hour. Bake for 10–12 minutes, until golden brown.
- Cool slightly before transferring to a rack.
