When you want something meaty without the meat, Portobello mushrooms are delicious and add so much flavor to a dish. Spaghetti with lemon and garlic Portobello mushrooms was one fantastic meal I prepared over the weekend.

Watermelon jelly

I had started with the idea of making a simple watermelon salad but stayed a little longer in the kitchen to use the leftover bits of watermelon to make a jelly. I am glad I have a little help from my son. Homemade jelly from fresh fruits is far better than synthetic ones. No cooking was involved, and it took us 10 minutes to put things together. 

Asian (Banh Mi inspired) beef sandwich

This Vietnamese Banh Mi sandwich has inspired this Asian beef sandwich. It’s light, crunchy, and fresh, with a burst of flavors in each bite. These are the perfect adjectives to describe this sandwich. I wanted to avoid the cheese and mayo for once, and trust me, and I didn’t miss them.

Mangomisu or mango Tiramisu

With leftover ingredients from Matcha tiramisu, another tiramisu was definitely in order. Mango tiramisu was a popular choice as it is the season of mangoes. These days I tend to have a jar of mango puree in the refrigerator. This helps me whip up a refreshing milkshake or simple dessert in no time.

Nothing is better than beginning the day with a plate of fragrant Lemony pancakes. Citrus flavors are a huge hit in my family. It’s easy to get the family down for breakfast on the weekend with these easy and light pancakes. 

Matcha Tiramisu

The simplicity of this dessert will surprise you. I love matcha, and Matcha tiramisu is as elegant as the drink. Kids can enjoy this one without the fear of caffeine. Matcha balances out the rich and heavy feel of the cream, making it light. 

Cauliflower steaks with lemony hummus

I have been away from meat this summer as much as possible. However, this delicious cauliflower steak is light, and I ate it guilt free. I paired it with creamy, lemony hummus and crispy chickpeas. Honestly, any good hummus will do justice to this steak, and I sometimes prefer labneh too. 

Blueberry masala limeade

I look for a bit of variety in my summer coolers. Blueberry masala limeade with home grown mint is my answer and has a perfect twist. I can sip on these the whole day. I got inspired by Indian street vendors selling masala “nimbu pani”. What takes me 10-15 minutes, our roadside vendors do it in a minute. And it’s refreshing.

Craving for something light and refreshing for your lunch. Here is a straightforward salad that can serve as a side too. This radish summer salad with lemon honey vinaigrette is a delight. Radish is an underrated vegetable, but it is delicious, and I love it for that sharp taste.

Summer drinks with Mango

Well, anything that has mango is welcome. Desserts, drinks, frozen treats, pickles, etc., the list is endless. The fact that mangoes can combine with other exciting ingredients to create something new makes them the ‘King’ of fruits. It is a staple fruit right now in my fruit basket.
