Nothing is better than beginning the day with a plate of fragrant Lemony pancakes. Citrus flavors are a huge hit in my family. It’s easy to get the family down for breakfast on the weekend with these easy and light pancakes.

The simplicity of this dessert will surprise you. I love matcha, and Matcha tiramisu is as elegant as the drink. Kids can enjoy this one without the fear of caffeine. Matcha balances out the rich and heavy feel of the cream, making it light.

I have been away from meat this summer as much as possible. However, this delicious cauliflower steak is light, and I ate it guilt free. I paired it with creamy, lemony hummus and crispy chickpeas. Honestly, any good hummus will do justice to this steak, and I sometimes prefer labneh too. 

Blueberry masala limeade

I look for a bit of variety in my summer coolers. Blueberry masala limeade with home grown mint is my answer and has a perfect twist. I can sip on these the whole day. I got inspired by Indian street vendors selling masala “nimbu pani”. What takes me 10-15 minutes, our roadside vendors do it in a minute. And it’s refreshing.

Craving for something light and refreshing for your lunch. Here is a straightforward salad that can serve as a side too. This radish summer salad with lemon honey vinaigrette is a delight. Radish is an underrated vegetable, but it is delicious, and I love it for that sharp taste.

Well, anything that has mango is welcome. Desserts, drinks, frozen treats, pickles, etc., the list is endless. The fact that mangoes can combine with other exciting ingredients to create something new makes them the ‘King’ of fruits. It is a staple fruit right now in my fruit basket. 

Basics of styling desserts

Desserts are a special part of my life;  I love styling as much as eating desserts. There are so many subcategories, such as frozen, baked, traditional, etc. Clubbing all the desserts under one heading and treating them the same way is probably not the best way to deal with this topic.

Three-ingredient healthy PB cookies

When you need some cookies and need them real quick, three-ingredient PB cookies are the answer. I tried to make them healthy with coconut sugar, which is gluten-free. I and kiddo made them during a break while online school was happening. We had fun as it was so simple and easy to make.

I am partly glad that the winter is short in this part of the world, as my list of cravings for comfort food is endless during winter. I am also happy I crave soups and dal during winter. They are light and keep me full when paired with some bread. Pumpkin and lentil are a great combination. It tastes delicious as a soup with the right amount of heat and spices.

The weather is so beautiful right now that I look forward to those mornings when we can enjoy our breakfast on the balcony, soaking in as much sun, relishing on the soft crepes, and sipping on coffee. Delicate crepes with the hint of lemon paired with blueberries make for a brilliant breakfast.
