Noodles in Bone Broth
Preparation Time: 30 Mins
Yield: serves 2
Bone broth 400 ml
Rice Vermicelli 1/2 packet
Soy Sauce 1 ½ Tsp
Fish Sauce ½ Tsp
Chilli flakes ½ Tsp
Garlic 1 clove
Ginger ½ inch
Sweet pea a handful
Spring onions 2 tbsp (chopped)
Sprouts 2-3 tbsp
Salt ¼ Tsp
sesame seeds 1tsp
- Cook the rice vermicelli as per instructions on the packet and keep aside.
- Boil the sweet peas for 2-3 mins and immerse them in an ice cold water immediately.
- Heat some oil in a pan and saute garlic and add mushrooms.
- Once the mushrooms are done set them aside.
- Add a little oil to the same pan and saute the garlic ginger and slowly add the broth.
- Add in chili flakes, black pepper, soya sauce, fish sauce and gently heat them.
- For assembling: place the noodles in a bowl. Pour the broth. Top with sauteed mushrooms, sweet peas, sprouts, spring onions and toasted sesame seeds.
