Noodles in Bone Broth

Course:  appetizer/main
Cuisine: Asian
Preparation Time: 30 Mins
Yield: serves 2
Bone broth 400 ml
Rice Vermicelli 1/2 packet
Soy Sauce 1 ½ Tsp
Fish Sauce ½ Tsp
Chilli flakes ½ Tsp
Garlic 1 clove
Ginger ½ inch
Mushrooms 4-5
Sweet pea a handful
Spring onions 2 tbsp (chopped)
Sprouts 2-3 tbsp
Salt ¼ Tsp
Black pepper
sesame seeds 1tsp
  1. Cook the rice vermicelli as per instructions on the packet and keep aside.
  2. Boil the sweet peas for 2-3 mins and immerse them in an ice cold water immediately.
  3. Heat some oil in a pan and saute garlic and add mushrooms.
  4. Once the mushrooms are done set them aside.
  5. Add a little oil to the same pan and saute the garlic ginger and slowly add the broth.
  6. Add in chili flakes, black pepper, soya sauce, fish sauce and gently heat them.
  7. For assembling: place the noodles in a bowl. Pour the broth. Top with sauteed mushrooms, sweet peas, sprouts, spring onions and toasted sesame seeds.
