Mango coconut layered panna cotta

Mango season is upon us, and I could not resist making this dessert. It was a request from my son, who is a Mango lover too. He calls it Mango jelly; I call it layered mango and coconut panna cotta. Coconut and mango flavors work well together.

Chicken Haleem

Three layers of delightful creamy texture are pure bliss. The dalgona layer strengthens the coffee flavor. So, you may want to skip it while making for children.

Turmeric dalgona

With the temperature hitting 40 degrees, I crave chilled drinks on weekends. I usually go for a glass of iced coffee or tea. However, last year the whole world got introduced to “Dalgona.” The classic Dalgona is off-limits for the kiddo, and he tends to feel left out. This time I had to think of something that he usually ignores but would happily drink with a chunk of ice and a fancy straw.

Even though the classic falafel never fails to impress, I add a twist to keep the interest alive. Sweet potato falafels have a gorgeous color and taste delicious. Sweet potatoes help bind the falafel together. 

Curried chicken Fatteh

Here is my take on a popular Middle East dish called Chicken Fatteh. A beautiful layered dish with loads of flavors and textures. The base is crispy pita bread, followed by the chicken with chickpeas layer and then the garlicky yogurt sauce.

Thai Basil beef is a stir fry of healthy ingredients and beef strips. A handful of ingredients leads to a colorful vibrant dish. You can switch beef with chicken to keep it light. 

Pearl couscous Salad

Here is a light salad with couscous and a vinaigrette. The texture of pearl couscous is unique, and it works well with the crunch from fresh vegetables. With summers fast approaching, a light salad for lunch is such a great idea.
