Thai red curry with cottage cheese

Thai cuisine has a special place in our house. Both my parents and in-laws love it. I always tend to keep a jar of curry paste from stores for those sudden cravings. However, preparing the curry paste at home from scratch makes it so much better. Presenting homemade red thai curry with Indian cottage cheese or paneer.

Mango and saffron pancakes

These mango and saffron pancakes will blow your mind. Saffron and mango flavors blend beautifully. I combine these flavors very often for dessert. However, this was the first time I tried it for breakfast.

Matcha (latte) affogato

The name “Matcha (latte) affogato” sounds so exotic right? But it’s pretty simple and easy to make. Just some good quality matcha and some ice cream yield a beautiful dessert. Matcha (latte) affogato is a refreshingly light dessert, and we loved it.

Mango coconut layered panna cotta

Mango season is upon us, and I could not resist making this dessert. It was a request from my son, who is a Mango lover too. He calls it Mango jelly; I call it layered mango and coconut panna cotta. Coconut and mango flavors work well together.

Chicken Haleem

Haleem is a rich lentil-based stew that has shredded meat and tastes unique. It is popular in parts of India, other Southeast Asian countries, and the Middle east. I tried it for the first time in the Uae. There was a Pakistani restaurant close to where we lived. Those days I was culinarily challenged, and my cooking skills were below average.

Coffee panna cotta with dalgona whip

Here is a light dessert for all the coffee lovers. Coffee panna cotta with dalgona whip topped with cream.
Three layers of delightful creamy texture are pure bliss. The dalgona layer strengthens the coffee flavor. So, you may want to skip it while making for children.

Baked salmon and pearl couscous

Couscous with baked salmon makes for a quick and delicious meal. Add some fresh thyme and cherry tomatoes to elevate the taste. Dinner post Iftar calls for a light, nutritious meal, and baked salmon with couscous ticks all the boxes.

Turmeric dalgona

With the temperature hitting 40 degrees, I crave chilled drinks on weekends. I usually go for a glass of iced coffee or tea. However, last year the whole world got introduced to “Dalgona.” The classic Dalgona is off-limits for the kiddo, and he tends to feel left out. This time I had to think of something that he usually ignores but would happily drink with a chunk of ice and a fancy straw.
